Thai Peanut Salad from votes Ingredients 4 cups kale 2 cups lettuce, chopped 2 persian cucumbers, thinly sliced 1 red bell pepper, thinly sliced 2 carrots, peeled and thinly sliced 1 cup shredded cabbage 1/4 cup cilantro, chopped 1/3 cup roasted cashews, or peanuts 3-4 mint leaves, chopped Peanut Sauce 1/3 cup natural peanut butter Juice from 1/2 lime 3 tbsp coconut aminos or low sodium soy sauce 2 tbsp honey or pure maple syrup 2 tsp sriracha 1 tsp grated ginger 1 clove of garlic, crushed 2 tbsp of water, or more if needed or sub coconut milk Salt to taste Directions In a small blender or food processor, add the sauce ingredients and blend until smooth
